Domaine Ventoura, just north of Chablis in Fontenay, is a family farm turned sharp, estate-driven operation since 2014. Across 11 hectares (plus a little top-tier fruit from friends), everything is now certified organic. Old vines, wild ferments and a light touch in the cellar keep things honest. Even in the warm 2023 vintage, the wines stay true to type—salty, stony and seriously Chablis.

Classic, quietly confident Chablis. Citrus peel, green apple and a touch of white flowers sit over chalk dust and oyster shell. The palate is linear and precise, with bright acidity and a subtle textural roundness from lees. Finishes saline, stony and refreshingly dry—more about tension and minerality than fruit.
