Domaine Ventoura, just north of Chablis in Fontenay, is a family farm turned sharp, estate-driven operation since 2014. Across 11 hectares (plus a little top-tier fruit from friends), everything is now certified organic. Old vines, wild ferments and a light touch in the cellar keep things honest. Even in the warm 2023 vintage, the wines stay true to type—salty, stony and seriously Chablis.

A step up in depth and detail. White peach, lemon curd and subtle florals sit over chalk, oyster shell and a gentle hint of spice from oak. The palate is broader but still tightly wound, with layered texture balanced by bright, driving acidity. Long, saline and quietly powerful—Fourchaume with both precision and presence.
