Syrahmi is the project of chef turned sommelier turned winemaker Adam Foster, whose Rhône-inspired wines have become a distinctive expression of Heathcote. His approach is thoughtful and site-driven, with a focus on capturing Shiraz with freshness, savoury detail and finesse rather than sheer weight.

The 2021 Home Block comes from Adam’s tiny, high-density vineyard at Tooborac, planted on decomposed granite at the cool southern end of Heathcote. Dark plum, black cherry and blueberry are layered with white pepper, violets, rosemary and smoky spice, while fine, tightly woven tannins bring impressive structure. Deep and concentrated yet remarkably energetic, it carries a mineral edge and savoury complexity through a long, precise finish.
