Didier Grappe, an uncompromising vigneron in Saint-Lothain, Côtes-du-Jura, farms 3.5 hectares of local varietals organically. Certified in 2007, his vineyard includes Pinot Noir, Poulsard, Trousseau, Chardonnay, and Savagnin, all grown in marl soils. Using no chemicals, cultured yeasts, or additives, his wines reflect his dedication to nature—refined, restrained, and subtly tense.
Vin Jaune, a signature of the Jura region, is made from 100% Savagnin grown in blue and grey marl soils. Hand-harvested, it matures for 6 years in barrels without topping up, allowing a flor layer to develop, imparting distinct walnut and saline characters.
