Syrahmi is the project of Adam Foster—a chef turned sommelier turned winemaker—whose journey through hospitality has deeply shaped his approach to wine. With a palate-first mindset, his focus is on balance, structure and drinkability, crafting wines that sit as comfortably at the table as they do in the cellar.

Working primarily out of Heathcote, Foster draws inspiration from the Northern Rhône, producing Syrah-led wines that emphasise perfume, spice and finesse over weight or extraction. Fruit is carefully sourced from thoughtful growers, with an emphasis on site expression and vineyard integrity.

In the winery, the approach is measured and precise—wild fermentations, considered use of whole bunch, and restrained oak all play a role in building complexity without overshadowing the fruit.

The resulting wines are detailed and composed, combining savoury depth with bright structure—Australian Syrah through a distinctly Rhône lens.
