GUM is the small-batch project of sommelier-turned-winemaker George McCullough. Drawing on years working in restaurants, George produces fresh, savoury wines from thoughtfully farmed vineyards across Victoria, with a strong focus on food and drinkability.
His Sangiovese comes from Mt Camel in Heathcote. Red cherry and raspberry are layered with fennel seed, liquorice, dried herbs and gentle spice. Bright and savoury, lively acidity and fine, raspy tannins bring energy and structure through a fresh, vibrant finish.
