GUM is the small-batch project of sommelier-turned-winemaker George McCullough. Drawing on years working in restaurants, George explores vineyards across Central Victoria with a focus on thoughtful farming, minimal intervention and fresh, savoury wines made firmly with the table in mind.
His Gamay comes from the granitic slopes of Mount Alexander. Raspberry and red cherry are layered with violets, fresh herbs and gentle peppery spice. Fragrant and beautifully energetic, crunchy acidity and fine, lacy tannins carry the palate through a juicy, fresh and savoury finish.
