Like Riesling, we love Pinot Noir for its sensitivity to the environment that it is grown in and how that can be translated into a wine glass. Whilst known for being a light and dainty variety, 'Iron fist in the velvet glove' expressions are common, from Burgundy to the Mornington Peninsula.
