GUM is the small-batch project of sommelier-turned-winemaker George McCullough. Drawing on years working in restaurants and a love of the great gastronomic wines of Europe, George produces thoughtful, characterful wines with a focus on texture, freshness and drinkability.
His rosé is made from Sangiovese grown in Victoria’s King Valley. Wild strawberry and red cherry are layered with blood orange, rosehip and gentle herbal notes. Dry and beautifully energetic, bright acidity and fine savoury texture carry the palate through a fresh, lightly spicy finish.
