After 18 years managing Domaine de la Pinte, Philippe Chatillon founded his own estate in 2013 in Passenans. He farms his steep marl-rich vineyard biodynamically, using no chemicals or fertilizers. In the cellar, he employs old oak, spontaneous fermentation, and no filtration or sulphur, creating pure, complex wines with balance enhanced by harp vibrations.
This extraordinary Savagnin is harvested overripe in late October, macerated with skins in amphora for five months, then aged for seven more months in earthenware, influenced by singing bowls and a crystal harp. Made with natural yeasts and no added sulphur, it gleams golden-orange, with notes of mandarin, sweet spices, and a balanced, mineral finish. The jury is still out whether it's an orange or white wine, either way, it's a fascinating wine.
