Domaine Violot-Guillemard, located in Pommard, is run by Thierry Violot and his wife Estelle. Thierry inherited small, exceptional vineyards, now passed to his son Joannes. Producing just 2,000 cases annually from five hectares, the estate practices organic farming. Grapes are handpicked, cold macerated, and fermented naturally in open wood fermenters. The wine is aged in low-toast barrels with 50% new oak. The result is a vibrant, expressive Pinot Noir that defies the typical perception of Pommard’s tough, long-aging wines. Noirien's blend of Seurret and Crenilles plots showcases elegant, expressive fruit with a refined, balanced profile.
