Castelmaure is a 102-year-old co-op based in rocky Corbières in France’s southwest. They make unfussed, guzzleable wine from well-farmed plots around the region and have cultivated long-term relationships with many of their intergenerational farmers.

The older, more serious, sans soufre sibling of perennial favourite La Buvette, substituting Carignan for Syrah. Where La Buvette can be chilled and is wonderful of spring/sumer, San Sa! is best enjoyed alongside hearty fare as the leaves fall.
