2021 Tenuta San Marcello 'Volatile' Frizzante Marche, Italy
Massimo Palmieri and his family left Milan for a quieter life in the rolling foothills of Marche. Obsessed with the qvevri-raised wines of Georgia, he only uses stainless steel and Georgian qvevri to ferment and age the wines that come from his biodynamically-farmed vineyard.
Made from the sun-kissed and sea-sprayed verdicchio, Massimo has made an absolutely delicious pet nat. Drink very cold (and open slowly) as an aperitif to kick things off right!
2019 Terraquilla 'Terrebianche' Col Fondo Emilia-Romagna, Italy
This is a blend of two zippy-fresh white grapes, pignoletto and trebbiano romagnolo, fermented in stainless steel after a short, cold maceration then bottled still fermenting.
It's released undisgorged after fifteen months, that is, with the natural sediment from finishing fermentation in bottle. This is much more time than most col fondos are held back, producing a much more refined fizz than this category's reputation presumes.

Lambruscos Salamino and Sorbara with a splash of native white grape pignoletto. Deep purple hue a harbinger for smell and taste—dark, wild berries treble with savoury, herbaceous bass. More pepperoni, per favore.
