Jean-Baptiste Cordises or ‘JB’ is a much-loved and highly recognisable character in Australia’s natural wine community. His face first appeared here on the floor of City Wine Shop followed by countless vintages in Europe, Australia and even making sake in Japan.
His Chardonnay come from an organically-farmed vineyard in the Adelaide Hills. It’s carbonic macerated and foot-stomped to slowly extract juice. It sees quite a bit of air during fermentation and ageing, resulting in an open-weave wine of texture and substance.
