Dominique Piron usually makes great value Beaujolais, but this is his house fizz made with chardonnay from neighbouring Burgundy. 

It comes from a small, slow-ripening plot within the village of Corcelles and is made in traditional Crémant fashion. Fermented in stainless steel then aged on lees for a year, it sees a small dosage (sugar at bottling) but is dry and immensely moreish. An ideal Christmas day starter.
