Winemaker Valerie Frison cultivates 6 hectares of vines at Ville sur Arve in the Cote des Bars region in southern Champagne. Her vineyards are 93 per cent pinot noir and 7 per cent chardonnay and have been certified organic since 2003. Valerie takes great care to ensure that the grapes are picked at optimum ripeness. The wines are barrel fermented on lees. A natural primary ferment occurs, followed by spontaneous malolactic fermentation. Valerie believes that natural vinification allows her Champagne Brut Nature to truly express its terroir.
