Fausto and Cinzia Cellario are 3rd generation winemakers in the village of Carru on the western outskirts of the Langhe. The family believes in only working with local, indigenous Piemontese grape varieties and fiercely defends local winemaking traditions both in the vineyard work and the cellar practices. Vineyard work is organic (soon to be certified) and all the fermentation take place with indigenous yeasts. Sulphur is only added in tiny quantities at bottling if necessary.

Three glorious litres of Favorita, Vermentino, Rolle—the grape of many names! Whether it's Favorita from Piedmont, Vermentino from Sardinia, or Rolle from the south of France, the wine it produces is always bright, often saline, and unwaveringly refreshing. This is the perfect aperitif; enjoy it with a dozen oysters or anchovies, close your eyes and imagine you're in Piedmont in the middle of April.
