Magnums are always better!
Colbinabbin Fiano, 100% Fiano this year, sourced entirely from the Chalmers vineyard in Northern Heathcote. In the winery the fruit was destemmed and cold soaked for 2 days to gently extract phenolics pre-ferment, then pressed to tank for primary ferment. Ferment proceeded slowly through winter, with the wine racked off gross lees in early Spring and bottled in late September. All in stainless steel, a few days on skins, all native yeasts, very little oxygen and a small addition of sulphur prior to bottling. Savoury and spiced with crunchy acid and good time tropical fruit, a softening leesy texture and gentle grip brings a balance in the glass.
