Largely, Hitch is a young expression of Colbinabbin Sangiovese (92%), grown by Chalmers in Northern Heathcote; a whole berry semi carbonic maceration pressed after 12 days and aged in tank, topped with Nero D’Avola rose from the same site. A short maceration to temper the tannin and hold tight to acid and fruit. Aged over winter on solids in stainless tank and racked in early spring with a small sulphur addition and bottled in late September. This wine is vivid, fresh and aromatic, with bright red fruit and subtle tannins from front to back, the IDEAL chillable red for summer outdoor drinking. - Notes from the winemaker, Tim
