Eumeralla vineyard, direct-pressed Pinot noir, grown on sandy-loam volcanic soils over deep limestone in Mount Gambier. Bottled with 25 grams residual sugar and left on lees for 18 months before being hand disgorged for clarity and perfect fizz. Only 40 dozen produced. Tight wild strawberry with the extended lees contact in bottle adding maturity and complexity.
