This is exquisite and ultra rare apple cider grown and made in the most elevated cellar in Europe. Micro cidery Fuente Guijarro was founded by hero of conservation Manuel Moreno and it sits high up in the Sierra Nevada at 2000masl.
Every aspect of this project is hyper detailed and fascinating. Manuel and partner Sara Bertani farm three different orchards, all of which are planted to ancient and extremely rare varieties of cider apple endemic to the Sierra Nevada. Over the past 25 years, Manuel has rescued two varieties of apple (Carmueso and Don Manuel) that had been officially recored as extinct until Manuel revealed he had a single tree of each variety growing in his orchard.
Today he and Sara work with 14 different varieties. During harvest, the fruit is picked at night, each apple washed three times in source water, split by hand, PIPPED by hand and the gently crushed and pressed. These ciders are arguably the most delicate, precise and incredibly hydrating examples of any alcohol we ever tasted and really must be experienced to be believed. The La Ragua is Manuel and Sara’s most elevated orchard and is located above 2000masl in the Sierra Nevada National Park.
