It is all fruit from the Mandala Vineyard in Dixons Creek, Yarra Valley. Equal parts Cabernet Sauvignon, Pinot Noir and Chardonnay. Pinot Noir and Chardonnay straight pressed and co fermented. The Cabernet spent a week on skins. Light maceration. Blended then refermented in bottle with a bit of fresh juice to create fizz. Not disgorged. Get excited!
