2019 Fallow 'Matisse' Chardonnay

Organic farming, no sulphur
Fallow began with a love of made things. Winemaker, Spike, started baking sourdough, making home brewed beer and curing meats. From a barrel of Pinot he made in the family shed, the label has grown to five different wines and cider made in an urban winery in Healesville. They organically farm just over a hectare of grapes across two Yarra Valley sites and work closely with select growers for their other wines. Their belief being that good wine is grown in the vineyard and guided in the winery with the least intervention possible. The wines are raw, vivacious and fun, at once delicious and intriguing.
This is a blend of free run (just the juice, no skin, seed or stem contact) and seven day skin-contact Chardonnays from an isolated vineyard in St. Andrews. It’s rich and savoury, but still retains a line of freshness run down the middle. Chalky tannins. Great with a banh mi. A great release from a new producer to keep eyes on.
