Place: Burgundy, France
This a bone-dry sparkling wine made using 100% Chardonnay from a single site. Made from handpicked fruit and naturally fermented, the wine is aged for 18 months on lees, after which zero dosage liqueur is added, minimum sulphur is used and the wine isn't fined or filtered. The base is a blend of Chardonnay from 2014, 2015 and 2016. It's a substantial achievement by Vissoux to consistently outclass much of Champagne with this juicy yet elegant, crisply chiseled fizz.
