Organic farming, no sulphur
Cuvée des Etourneaux (or, the starlings’ cuvée) is named for the birds that ate the entire harvest in 2001. A blend of Gamay de Chaudenay and Gamay à jus blanc, the vines are cultivated on a flinty clay terroir, with the least intervention possible; vine treatments are made from nettle, horsetail, flowers of sulphur and minute doses of Bordeaux mixture. Matured 30 months in barrels, no new oak, plus one year in the bottle. Neither fined nor filtered, and without added sulphites.
