100% Premier Cru Pinot Noir (and 2% Meunier) from Chamery. 40% whole bunch, macerated for 3 weeks, then transferred to old barrels and amphora for 10 months. Zero SO2 at any stage. An incredible look at still wines from Champagne. Give this a good decant, at least an hour and it will start singing.
