100% Pinot Noir. This vineyard was bought and cultivated organically by Paul and Willy in 2018, so this is the first time they have made a wine from this site. Located Saint-Aubin, and the soils are made up of clay and limestone, with blue marl subsoils. These soils combined with a high altitude make it possible to guarantee a high level of density while maintaining freshness. Whole bunch vinification in old wooden barrels for 13 to 16 days with light punching down daily. Then aged in the same barrels for one year.
