NV Cellier de la Baraterie Method Traditionnelle, Savoie (Fra)
It is made from the Jacquère grape, cultivated in the village of Cruet. Farming and vinification are organic and exclude the use of pesticides, additives, or industrial techniques. There is no dosage, allowing the wine to fully express the fruit while maintaining its dryness. An incredible wine.
2019 Terrason Cremant, King Valley (Vic)
This is the first release of our Aligoté crémant. Both the Aligoté and Gamay are off John Darling's vineyard at Whitfield in the King Valley. These are ancient volcanic soils that are well suited to sparkling wine production. Made using methode traditionelle however we have backed off the pressure just a touch in the true crémant style. Base wine was natural ferment in old oak with no additions, disgorged with no dosage.

Estate-grown, biodynamic, naturally fermented, low-dosage fizz that shows up many conventional Champagnes for both quality and value. Expect waves of racy citrus and fresh peachy fruit and lots of rocky, flinty, earthy complexity, all wrapped up in a deliciously bready texture. The salty-fresh, smoky finish also makes it extremely food-friendly.
