Chouette is doing great things in the oft-overlooked Swan Valley. Seeking freshness over ripeness and drinkability over all else. 

This is their delicious chenin blanc, fermented in stainless steel then aged in old wood with batonnage. It smells and tastes of wet stones and crushed orchard fruit, with a slightly herbaceous inflection. Incredibly zippy and high-toned, but luscious in texture.
