Piquette is the quintessential something-from-nothing creation made by adding water to the grape marc left over after pressing to kickstart a second fermentation. The result is a  simple, lower-alcohol wine that competes admirably in the sour beer category. 

BK’s rendition is a story of grapefruit and Campari-esque bitterness alongside red-fruited refreshment. There’s not much more to say except open carefully and drink ice cold!
