You may know Andy and Clare from Bar Merenda, the honest and wonderful wine bar they opened in Daylesford a few years ago. They now make a small amount of wine from vineyards across central and western Victoria, with this cabernet fruit coming from the certified organic Chapoutier vineyard in Shay’s Flat.
This is the first time they have worked with terracotta for ferment and ageing and they are ecstatic about the result. A tensile wine with a chalky texture drinking wonderfully now, but with 3-5 years ahead for the patient.
