"Inspired by Panevino, Olek decided to make a torchiato: a wine using the juice coming out of the pressing of the pomace after fermentation of all red wines (Barbaresco, Barbera, Dolcetto, Pelaverga). The result is a structured and elegant wine, so recognisably Olek."
