Steve Kimonides has his hands in a few pies. One of them is pizza pies, as owner of Footscray’s slice shop as well as the owner of Burn City Smokers. Using space and equipment provided by the fun factory that is Konpira Maru, Steve has made some delicious expressions of Italian varieties through the lens of extreme drinkability and party friendliness.
‘Xanthe’ is the derivative of the Greek word “Xanthos” meaning yellow or blonde. The label hints at the yellow apple character that leaps from the glass, and what Fiano is famous for.
The grapes were fully de-stemmed and partially crushed, fermentation occurring completely on skins before being pressed to tank. Racking happened a couple times before being sent to bottle with a dash of sulphur.
