Havilah is the brainchild of Two Tonne Tasmania winemaker, Ricky Evans. His main focus is Pinot Noir—very good Pinot worth seeking out—but he experiments under the Havilah label with different varieties and styles.
The O is for Orange, first G for Gris and second for Gewurztraminer. The Gris is a blend of a batch that saw a week on skins, another that slumbered five months, rounded out by predominantly whole bunch Gewurztraminer. It’s weird and wonderful and would love some salty goodness to dance with.
