Fin wines, a fermentation collective, launched in January 2020 with a range of vinos, cidre, and piquette. Fin wines is producing young, fresh wines, ciders, and “fun” drinks with an emphasis on drinkability. We are doing this a very lo-fi way in terms of minimal additions, no filtering, spontaneous fermentation, and no fancy winemaking techniques.
Taungurung mataro grown by the Box Grove vineyard. 50% whole bunch. 50% destemmed. 8 days. No touchy. No pumpy. Pressed and raised in tank. A complex quaffer. Graphite minerality with dark cherry, red apple, allspice, white pepper with a splash of rose petal.
