Fin wines, a fermentation collective, launched in January 2020 with a range of vinos, cidre, and piquette. Fin wines is producing young, fresh wines, ciders, and “fun” drinks with an emphasis on drinkability. We are doing this a very lo-fi way in terms of minimal additions, no filtering, spontaneous fermentation, and no fancy winemaking techniques.
Wurundjeri Riesling grown on the home block in Dixon's creek. Grown thoughtfully and sustainably without use of herbicides, chemical fertilisers and pesticides. Hand picked by friends and family. Pressed and tank fermented on site. Wild ferment. On ferment lees for 3 months. Picked lean, bottled fresh. Freshly cracked coriander seed, makrut lime leaves and meyer lemons.
