100% destemmed and on skins for 3 days before ferment. Pressed to old puncheons for fermentation & ageing. 15ppm s02 added after MLF, none at bottling. This is a light, crunchy red, designed to be chilled. Savoury red fruits, fine tannin structure and a refreshing lick of acidity.
