The Sauvignon Blanc is from Shepherd's Hut. It was de-stemmed and had a skinny touch of skins before being pressed to tank, settled and racked. The Shiraz is from Zarepath, and was crushed to tank for 24 hours before the juice was drained off. The two varieties then came together for co-fermentation (wild, no additives of course), and finally, bottling just at that perfect moment. Undisgorged, as all good pét-nats should be. Pink fizzy tangy Lifesaver lollies. Serve ice cold.
