All the fruit was picked on the same day, de-stemmed and saw a few hours on skins before being pressed to tank (no pressings cut). It was settled overnight before racking off gross solids, then co-fermented (100% wild of course).The wine was bottled at the end of its single fermentation with absolutely no additions, and left to work its magic in glass. The wine is not disgorged. Serve ice cold. Orange wine meets pet nat. What's not to love!
