15 years old vines, lieu dit “Conservatoire - Montmelian”, terroir of limestone. Harvest by hand, transport of the grapes in small boxes. Cold maceration during 12-24 hours. Natural fermentation and winemaking techniques. Vatting for 2 to 3 weeks. Slight foot crushing of the grapes. Aged in 600 litters old oak barrels.
