The Baw Baw Cabernet Merlot comes from the Biodynamic Bull Swamp Vineyard farmed by Patrick Sullivan & William Downie in Warragul South. The vines are 38 years old and planted on rich red volcanic soils. We had picked just under a tonne of each Cabernet Sauvignon and Merlot. All grapes were de-stemmed and macerated on skins in stainless tank for 22 days, during which they were foot stomped (by Jess and Freya) twice a week. Once pressed they were transferred to a selection of wood for 10 month elevage. Delicious drinking now but would cellar if you're that way inclined.
