"I Custodi was founded in 2007 and, from the beginning, founder Mario Paluzzi set the groundwork to make I Custodi an Etna fuoriclasse, as the Italians say, one of the greats.

He has had an unwavering passion to work exclusively with the ancient albarello bush vines, some of which in his possession are 250+ years old and has key vineyard holdings on the northern and southeastern slopes.

Their cellar master is long-time Etna guru Salvo Foti who founded the I Vigneri consortium, determined to preserve tradition on Etna by maintaining albarello vines and volcanic terracing and, importantly, crafting the old world, traditional wines of Etna.

All wines are certified organic, hand-harvested and fermented with native yeasts. 

On the wine

Imbris, which takes its name from the Latin word for rain, is an homage to the climatic conditions of the vineyard. It comprises 100% Carricante grown on high elevation (900m) bush vines. A sublime fusion of the cold of the mountain and the fire of the volcano, unique geography and soil composition (including windswept red sands from the Sahara Desert!) force roots to dig deep to find moisture, creating a more concentrated flavour profile than your typical Etna Bianco. 

Raised 18 months in stainless steel before resting an additional two years in bottle, this elegant wine starts with a bright minerality and finishes with complex salinity. Steeped in luxurious freshness without losing its full, textured body.
