Giuseppe worked for Blackhearts & Sparrows for a number of years before embarking on his winemaking journey. Now he makes wine under his funnily named label, Sea Chicken, a dedication to his favourite animal, the Little Penguin of Southern Victoria.
This is a wonderful back-vintage that’s in a great place right now. It comprises four ferments in stainless steel followed by a slumber in old oak. Savoury and herbaceous, enlivened by dried cherry, with grainy, terracotta tannin. Decant for thirty.
